Discover how to play with your food in a fun and healthy way! Join Culinary Arts Education faculty member Chef Ryan Fillhardt in the 1440 Teaching Kitchen for an immersive, hands-on workshop exploring the history and nutritional benefits of Pinsa — a Roman-style pizza known for its authentic flavors and uniquely digestible crust.

Under Chef Ryan’s expert guidance, you’ll:

  • Make your own pinsa dough from scratch
  • Learn cooking techniques using a pizza oven, convection oven, and grill
  • Experiment with sauces, toppings, and creative combinations
  • And, of course, sample your creations


Pinsa is celebrated as a healthier alternative to traditional pizza thanks to its special dough and preparation method. Aligned with our 1440 “Food as Medicine” philosophy, pinsa offers meaningful nutritional advantages while delivering delicious results.

After the workshop, enjoy a locally sourced lunch at our community dining room, Kitchen Table, where you’ll learn how ingredients were selected and how they support the “food as medicine” approach.

  • 10:00-10:30 p.m.: Arrival & Registration
  • 10:30 a.m.-12:00 p.m.: Pinsa Workshop with 1440 Culinary Arts Education faculty Chef Ryan Fillhardt
  • 12:00-1:00 p.m.: Lunch at Kitchen Table; sustainable, locally sourced and mindfully prepared
  • 1:00-1:30 p.m.: Event Conclusion & Departures


Price: $75 per person, includes lunch at Kitchen Table

Lunch Menu:

  • French Bistro Salad, Radicchio, Frisee, Pickled Shallots, Cherry Tomato, Parmesan Crisp, Herbs from Joanie’s Garden, Tarragon Vinaigrette (Gluten Free, Plant-Based, Nut Free)
  • Tarragon Crusted Organic Pork Loin, Herbed Fregola, Brussels Sprouts, Asparagus, Fennel Fronds, Dill Oil, Corn Beurre Blanc (plant-based option available)
  • Raspberry Madeleines, Valrhona Chocolate, Smoked Maldon (Gluten Free, Plant-Based, Nut Free)
  • Please note: The menu is subject to change based on the availability of seasonal ingredients from our local farm partners. There is always a plant-based option available.


Event Notes:

  • If you have any dietary allergies or restrictions, please email us at info@1440.org so we may do our best to accommodate you.
  • Guests are welcome to arrive to campus and register as early at 9:30 a.m. to enjoy our Lodge Retail Shop, Bridge of Intentions and Common Grounds Patio. Please note that other locations of campus, including the trails and jacuzzi tub, are reserved for overnight program guest use only and are not available for this local Community Education Class.
  • This is an indoor event, held in our open-air Teaching Kitchen.
  • 1440 will provide everything required for this class.
  • This program may be filmed and/or photographed to support our 1440 nonprofit mission work, marketing and learning pillars.
  • Reusable water bottles are welcome -- filtered water stations are available throughout campus.
  • Kitchen Table offers ample indoor and outdoor seating, including outdoor covered seating options.
  • This is an 18-and-over event.


Cancellation Policy: Participants may request a refund up to 7 days before the event. After this period, all sales are final. All proceeds from Community Learning Events support our 1440 philanthropic and volunteer efforts.
