About this event

Join us for an inspiring educational dinner class in the 1440 Teaching Kitchen, where you’ll participate in a sea-to-table mindful eating journey and learn about our Food As Medicine nutrition philosophy while enjoying a seasonal tapas-style meal. Instructed and prepared by Chef Ryan Fillhardt, our 1440 Culinary Arts Education faculty and certified wine sommelier, this immersive experience highlights the health benefits of seafood, fresh garden herbs, and thoughtfully curated wine pairings.

Begin with a visit to Joanie’s Garden next to our Teaching Kitchen to explore the medicinal properties of herbs like rosemary, mint, and basil. Then, enjoy multi-course bites that showcase the nutritional value and benefits of sustainable seafood. When selected carefully, seafood is a rich source of high-quality protein, omega-3 fatty acids, vitamins and minerals, which supports muscle repair, brain function, immunity, and overall metabolic health. It also supports cardiovascular health, brain health, and has anti-inflammatory effects, which Chef Ryan will highlight with each tapas course.

To conclude the evening, guests will enjoy a dessert and after-dinner wine tasting, deepening their understanding of how thoughtful pairings can elevate their favorite dishes.

This flavorful journey connects culinary arts with holistic health — nourishing body, mind, and spirit through inspired eating.

  • Seafood Nutritional Highlights: Seafood is a rich source of high-quality protein, omega-3 fatty acids (EPA, DHA), vitamins (D, B12, A, E), and minerals (selenium, iodine, zinc, iron, calcium). These nutrients support muscle repair, brain function, immunity, and overall metabolic health.
    • Cardiovascular & Brain Health: Consuming 2–3 servings of fatty fish per week (e.g., salmon, sardines, mackerel) can reduce the risk of heart disease by up to 36%. Omega-3s help lower blood pressure, improve blood vessel function, reduce arrhythmias, and support cognitive health.

  • 4:30-5:00 p.m.: Arrival & Registration
  • 5:00-7:00 p.m.: Immersive educational dinner with Chef Ryan Fillhardt, 1440 Culinary Arts Education faculty & certified sommelier
  • 7:00-7:30 p.m.: Event Conclusion & Departures

 

Price: $150 per person, includes plated dinner, wine pairings and learning materials. Please note: This is a 21-and-over workshop.

Education Dinner Menu:

  • “Bagels & Lox”: California Caviar with Smoked Mount Lassen Trout, Tomato Confit, Shallot Cream Cheese, Mini Bagel (paired with NV J. Lassalle Cachet d’Or, Champagne, France)
  • California Rock Cod Aguachili: Lime, Avocado, Cucumbers, Red Radish, Red Onion, EVOO (wine pairing to be announced)
  • Grilled Monterey Bay Spot Prawn: Orzo Pasta, Soppressata, Roasted Peppers, Basil, EVOO Chili Crisp (paired with 2024 Domaine du Salvard Cheverney, Sauvignon Blanc, Cheverney, France)
  • West Coast Dungeness Crab “Roll”: Green Apple, Carrot Ribbons, Chives, Red Cabbage, Chipotle Aioli (paired with 2021 Thomas Fogarty Damiana Chardonnay, Santa Cruz Mountains, USA)
  • Miso Marinated California Black Cod: Wild Mushroom & Oregano, Roasted Beet & Miso Honey Puree (paired with 2022 Big Basin Lester Family Vineyard Pinot Noir, Santa Cruz Mountains, USA)
  • Dessert and its wine pairing to be announced

 

Event Notes:

  • If you have any dietary allergies or restrictions, please email us at info@1440.org so we may do our best to accommodate you.
  • Guests are welcome to arrive to campus and register as early at 3:30 p.m. to enjoy our Lodge Retail Shop, Bridge of Intentions and Common Grounds Patio. Please note that other locations of campus, including the trails and jacuzzi tub, are reserved for overnight program guest use only and are not available for this local Community Education Class.
  • Dinner will be served indoors in our open-air Teaching Kitchen, with access to Joanie's Garden and firepits.
  • 1440 will provide everything required for this class.
  • This program may be filmed and/or photographed to support our 1440 nonprofit mission work, marketing and learning pillars.
  • This is a 21-and-over workshop.

 

Cancellation Policy: Participants may request a refund up to 7 days before the event. After this period, all sales are final. All proceeds from Community Learning Events support our 1440 philanthropic and volunteer efforts.
