Join us for an inspiring educational dinner class in the 1440 Teaching Kitchen, where you’ll expand your culinary knowledge about the healing power of food and wine. Rooted in the principles of the Mediterranean diet and the terroir of Champagne, France, this immersive experience blends culinary knowledge with wellness wisdom, in our beautiful demonstration kitchen and garden setting.
Instructed and prepared by Chef Ryan Fillhardt, 1440 Culinary Arts Education faculty and certified wine sommelier, guests will discover during a multi-course learning experience how thoughtful pairings can nourish body and soul through mindful sourcing, seasonal cooking, and minimal-intervention winemaking. Anti-inflammatory ingredients like extra virgin olive oil, citrus, herbs, and seafood are woven throughout, and low-intervention cooking techniques preserve nutrient integrity and support digestive health in line with our central Food as Medicine philosophy.
This dinner offers a unique opportunity to explore the elegance and complexity of Champagne while celebrating the values of sustainability, wellness, and seasonal cuisine. Guests will discover what sets Champagne apart—from its exclusive terroir in France and the meticulous Méthode Champenoise to its diverse styles like Brut, Rosé, and Blanc de Blancs. The evening’s core themes highlight organic farming practices that enrich soil and flavor, minimal intervention winemaking that honors the grape and land, and terroir-driven wines that reflect the region’s chalky soils and centuries-old traditions. Paired with a seasonal, locally sourced menu featuring regenerative produce, garden herbs with medicinal benefits, and sustainably harvested seafood, this experience blends favorite dishes with thoughtful nourishment to help guests deepen their knowledge of culinary wellbeing.

Welcome Bite
- Potato Rusti with California Caviar, Oysters on the Half Shell with Tomato Mignonette (Paired with Loriot-Pagel Brut Nature NV, Champagne)
- Food as Medicine Insights: Potatoes offer complex carbohydrates and potassium, while caviar is rich in omega-3 fatty acids, supporting heart and brain health. Together, they provide a balance of energy and anti-inflammatory fats. Oysters are high in zinc, vitamin B12, and selenium; key for immune and neurological health. Tomatoes add lycopene, an antioxidant linked to reduced inflammation.
Course 1
- Monterey Spot Prawns Aguachili, Lime, Cucumbers, Red Onion, Cilantro Micro Greens, Extra Virgin Olive Oil (Paired with Fresnet-Juillet Blanc de Blancs Grand Cru NV, Champagne)
- Food as Medicine Insights: Spot prawns are lean protein sources with selenium and iodine. Lime, cucumbers, red onion, cilantro microgreens, and extra virgin olive oil (EVOO) combine to support digestion, hydration, and anti-inflammatory pathways. EVOO contributes heart-healthy monounsaturated fats.
Course 2
- Local Dungeness Crab Cake, Citrus Segments, Heirloom Radish, Chives, Bearnaise Sauce (Paired with Sanchez Le Guedard Meunier 2012, Champagne)
- Food as Medicine Insights: Dungeness crab is rich in protein, vitamin B12, and omega-3s, and citrus segments and heirloom radish provide vitamin C and digestive enzymes. Bearnaise sauce adds flavor while maintaining a moderate fat profile.
Course 3
- Miso Honey Local Black Cod, Wild Mushrooms, Honey Glazed Carrots, Miso & Roasted Beet Puree (Paired with Forget-Chemin Perpetuelle 'Reserve' (1991-2020), Champagne)
- Food as Medicine Insights: Black cod is a fatty fish loaded with EPA and DHA omega-3s, and wild mushrooms offer beta-glucans for immune support. Beets and carrots are rich in antioxidants and support liver detoxification.
Course 4
- Seared Filet Mignon Beef Carpaccio, Shaved Black Truffles, Toma Cheese, Lemon Zest, Micro Arugula, Red Onion Jam, EVOO (Paired with Salmon Special Club Rosé 2017, Champagne)
- Food as Medicine Insights: Filet mignon provides iron, zinc, and B vitamins, and black truffles and Toma cheese add depth of flavor and trace minerals. Micro arugula and lemon zest contribute vitamin K and digestive support.
Dessert
- Forbidden Rice Pudding, Fresh Raspberries, Toasted Coconut, Santa Barbara Uni (Paired with Charlier et Fils ‘Perle on Ice’ Rose Demi-Sec NV, Champagne)
- Food as Medicine Insights: Forbidden (black) rice is high in anthocyanins, fiber, and iron. Raspberries offer antioxidants and vitamin C, and toasted coconut provides healthy fats. Santa Barbara uni (sea urchin) adds omega-3s and zinc, making this a nutrient-dense finale.

Please note that other locations of campus, including the trails and jacuzzi tub, are reserved for overnight program guest use only and are not available for this local Community Education Class.
- Dinner will be served indoors in our intimate Teaching Kitchen, with access to Joanie's Garden and firepits.
