Join us for an inspiring educational dinner class in the 1440 Teaching Kitchen, where you’ll participate in a California Coastal-focused mindful eating journey, learning about our Food As Medicine nutrition philosophy and health-forward Mediterranean cooking techniques while enjoying a seasonal tapas-style meal. Instructed and prepared by Chef Ryan Fillhardt, our 1440 Culinary Arts Education faculty and certified wine sommelier, this immersive experience highlights the health benefits of olive oil, fresh garden herbs, and thoughtfully curated wine pairings from Burgundy, France and the Santa Cruz Mountains.
Begin with a visit to Joanie’s Garden next to our Teaching Kitchen to explore the medicinal properties of herbs like rosemary, mint, and basil. Then, enjoy multi-course bites that showcase the nutritional value and benefits of a Mediterranean-inspired diet. The evening's menu features synergistic benefits like blood sugar balance, gut and immune support, anti-inflammatory protection, and heart and metabolic health, which Chef Ryan will highlight with each tapas course.
This flavorful journey connects culinary arts with holistic health — nourishing body, mind, and spirit through inspired eating.
Throughout this educational dinner experience, guests will learn:
- The potential key health benefits and nutrients in a local seafood-forward diet, using cooking techniques including extra virgin olive oil, wine, and fresh herbs
- How low-intervention cooking techniques preserve nutrient integrity and support digestive health in line with our central Food as Medicine philosophy.
- Creative ways to combine food and wine for enhanced nutrition and enjoyment
- Recipes and pairings to create inspiring meals at home
As a nonprofit philanthropic campus, proceeds from 1440 community education class bookings contribute to serving our community by providing scholarships and volunteer services in support of creating hope for living well. Bon appetit!

Price: $225 per person, includes plated dinner, wine pairings, an amenity bag, and learning materials. Non-alcoholic wines are also available. Please note: This is a 21-and-over workshop.

- Guests are welcome to arrive to campus and register as early at 3:30 p.m. to enjoy our Lodge Retail Shop, Bridge of Intentions and Common Grounds Patio. Please note that other locations of campus, including the trails and jacuzzi tub, are reserved for overnight program guest use only and are not available for this local Community Education Class.
- Dinner will be served indoors in our open-air Teaching Kitchen, with access to Joanie's Garden and firepit.
- 1440 will provide everything required for this class.

Cancellation Policy: Participants may request a refund up to 7 days before the event. After this period, all sales are final. All proceeds from Community Learning Events support our 1440 philanthropic and volunteer efforts.
